Meet Me on the Radio Cooking show

This is our first time of having cooking taking place (almost) live on the airwaves!
Lots of rich conversation, cooking sounds and delicious sounding dishes from around the globe with music, memories and stories of ingredients flowed out from Resonance FM on Tuesday 8 December 2020.
Ros prepared her chicken soup throughout the show which focused on food and recipes. Residents of Lewisham Homes remembered their favourite meals, and Delitia shared suggestions for the perfect rice and peas. We also heard about the harvesting of yam in Ghana, and learned about the Yam Step from Fred Astaire!
Ros wanted to share her recipe for Chicken Soup with you so here it is:
Ros’s Chicken Soup Winter Warmer
Ingredients
Chicken Wings or your preference Chicken pieces
Packet of chicken noodle
Onion
Spring onion
Thyme
Garlic
Pimento =spice
Salt and/or pepper
Fresh whole Scotch Bonnet pepper
Turmeric
Pumpkin
Carrots
Cho Cho = a bit like Turnips
Corn on the cob
Dasheen Breadfruit if in season
Plain Flour
Yam = peel and cook like a potato/ yellow or white
Potatoes
Sweet potatoes
Spring onions
Celery
Method
First wash the chicken in vinegar and lemon
Bring a large pot of water to boil and put chicken in with chopped the onion and garlic
Simmer for 15 mins.
To make the dumplings, mix flour salt and water into a bowl to form a dough. Take off small pieces to make little round balls, put into the pot
Next Step:
Peel and wash all the vegetables cut in bite size and put in the pot
Put the chicken noodles in with the rest of the spices, check seasoning and simmer until cooked.
Preperation and cooking time should be around 1hour – but check.
